Pancakes that were legitimately too good to be true and upsettingly filling. No more pancakes from the box! Use the base pancake recipe to make whatever variation you want!
Base:
2 Bananas, mashed
2 eggs (I used more to make several variations)
½ cup quick oats
1 tbsp ground flax seed
1 tbsp chia seeds
1 tbsp wheat germ
Mash 2 bananas until soft. Add 2 eggs and whip together. Add the dry ingredients together.
BANANA PANCAKE VARIATION (Which is basically the base version for all of the rest of the pancakes below)
Add: 1 tbsp cinnamon
BLUEBERRY PANCAKE VARIATION
Add: 1 tsp vanilla extract
1 cup blueberries
Pan fry with coconut oil on low-medium heat.
Blueberry Pancakes served with fresh blueberries.
DARK CHOCOLATE CHIP PANCAKES Add:
1 tbsp dark chocolate powder
¼ cup dark chocolate chips
Sprinkle of salt
Pan fry with coconut oil on low-medium heat.
Dark Chocolate Chip Pancakes served with frothed almond milk.
ALMOND BUTTER CHOCOLATE CHIP PANCAKES
Add:
¼ cup almond butter
¼ cup chocolate chips
Sprinkle of salt
Pan fry with coconut oil on low-medium heat.
Almond Butter Chocolate Chip Pancakes served with almond butter.
For consistent pancake size, use a measuring cup or ladle.
Feel free to also serve with maple syrup!
